kẹo dừa

One of the things I learnt at the village was how the Vietnamese made kẹo dừa, also known as coconut candy.

The actual recipe for coconut candy is actually passed down from one generation to the next, so buying kẹo dừa from different places might result in different texture or sweetness. The whole process in the village is all manually done from the grating, the cooking and stirring, shaping and molding to cutting and packing. The coconut husks are used as fuel and nothing from the coconut tree is ever wasted as every part can be made useful or eaten.
